Carnivore Ice Cream Recipe

If you are on a carnivore diet, it is important that you consume desserts low in dairy. Here are a few ice cream recipes I’ve personally tried to help you maintain a healthy lifestyle.

1. No-Churn Vanilla Ice Cream Recipe

Recipe Overview:

  • Prep Time: 10 minutes
  • Cook Time: 10 minutes
  • Total Time: 6 hours and 20 minutes
  • Number of Servings: 4

Ingredients:

  • 3 raw egg yolks
  • 1.5 cup heavy whipping cream
  • 2 teaspoons vanilla extract
  • 3 tablespoons icing sugar
  • 1/3 teaspoon sea salt

Instructions:

  1. Separate the yolk from the egg whites.
  2. Whisk egg yolks.
  3. Pour the heavy whipping cream into a saucepan over medium heat.
  4. Add whipped egg yolks, vanilla extract, salt, and icing sugar.
  5. Bring the mixture to a simmer, then lower the heat. Stir until the ice cream thickens, then remove from heat and let it cool.
  6. Once the mixture cools, place it in a container and chill in the fridge for about two hours.
  7. Pour the chilled mixture into a silicone mold ice tray and freeze for six hours.
  8. When you want some ice cream, pull out the frozen cubes, put them in a blender with three tablespoons of heavy whipping cream, milk, or water, and blend until it’s smooth and creamy.

Recipe Notes

You can also make this carnivore ice cream recipe with an ice cream maker. Stir the mixture well before pouring it into the machine, then churn until it’s thick. You can serve immediately.

You can also make this ice cream by pouring the mixture into a loaf pan and freezing it.

However, if you pour it into a loaf pan, you should occasionally stir the ice cream to prevent ice crystals from forming.

Be mindful of how long you keep the ice cream cubes frozen. Frost can form on the tops if you leave the cubes exposed for too long. You can avoid this by transferring the carnivore ice cream to a container.

2. Carnivore Vanilla Ice Cream

Recipe Overview

  • Prep Time: 10 minutes
  • Cook Time: 10 minutes
  • Total Time: Overnight and 20 minutes
  • Number of Servings: 4

Ingredients:

  • 2 eggs
  • 11.8 oz heavy whipping cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons xylitol

Instructions:

  1. Separate the yolks from the whites.
  2. Whisk the egg yolks until fluffy.
  3. Mix heavy whipping cream, vanilla extract, and xylitol on medium heat.
  4. Bring the mix to a boil and let simmer until the mixture thickens. Then set the heat to low.
  5. Add whipped egg yolks to the mix and stir until it thickens.
  6. Let the ice cream cool to room temperature.
  7. Beat egg whites until they are fluffy.
  8. Add egg whites to the cool mix.
  9. Pour the ice cream into a jar or a freezable container and put it in the freezer overnight.

Recipe Notes

This recipe is tricky because egg yolks cook easily. If the heat is too high, you’ll end up with scrambled eggs. That’s why you should be careful when combining egg yolks and the cream mixture.

You should temper the eggs or cool the milk, and don’t cook too long [1]. The mixture doesn’t need to be very hot.

You can also temper the eggs and add the raw cream to the eggs by a spoonful to avoid cooking egg yolks.

Recipe Overview:

  • Prep Time: 1 day
  • Cook Time: 30 minutes
  • Total Time: 1 day and 30 minutes
  • Number of Servings: 6 cups

Ingredients:

  • 4 cups of raw milk
  • 1/2 cup raw honey
  • 1 vanilla bean
  • 1/4 teaspoon sea salt

Instructions:

  1. Prepare the raw milk a day before you make the cream mixture. Leave the milk in the fridge for 24 hours, so the cream accumulates at the top. Put the ice cream bowl in the freezer.
  2. Pour the raw milk into the blender. Add the vanilla bean (without the seeds). Add honey. Blend until you have a smooth mix.
  3. Take out the ice cream bowl from the freezer. Put the cream mix into it and place it in the ice cream machine. Let it churn until it thickens. Once the mix thickens, you can eat your ice cream.

Recipe Notes

You need an ice cream maker to make this carnivore ice cream recipe. Use a scoop to move the frozen ice cream to the bowl.

You can add some sea salt to the ice cream. This makes the caramel flavor more noticeable.
