January is here which means salads are back on the menu...for now at least. As February nears I am starting to think about the next holiday on the calendar, which is of course Valentine's Day. This Raspberry Truffles Recipes is the perfect sweet treat for that special someone! For the planners out there these truffles can be prepped and made ahead of time then stored in the fridge, or even the freezer.

The truffles can be made with either white or dark chocolate and decorations can be easily customized. Also, there raspberry cheesecake truffles are easy enough for even the novices in the kitchen to make as gifts (I am looking at some of you dudes out there, namely my husband). So whether you are making these for your husband, friend or child these will be the perfect dessert for the sweetest holiday of the year!

Kitchen Tools

  • A Food Processor or Blender:You will need to grind the graham crackers into fine crumbs, so the truffle filling holds together. To avoid chunks make sure to use either a blender or food processor.
  • A Large and Small Bowl for Prep:Make sure the small bowl is microwavable, because you will use it to melt the chocolate. Alternatively, you can use a small saucepan to melt the chocolate on the stove.
  • Measuring Cups and Spoons
  • A Cookie Scoop (Optional):To get all the truffles a uniform size you can use a cookie scoop. Of course you can just eye-ball it if you wish!
  • A Fork or Spoon

Ingredients

  • Cream Cheese
  • Whipped Topping
  • Vanilla Extract
  • Fresh Raspberries:I recommend using fresh raspberries and not frozen. If you use frozen the flavor won't come through as much, and there will be excess water that will be the raspberry cheesecake truffles softer.
  • Graham Crackers
  • Melting Chocolate: I used a mixture of white melting chocolate and dark melting chocolate wafers for these truffles. You can use one of the other or both if you prefer. Make sure you use melting chocolate, baking chocolate, or almond/ivory bark for this recipe and not just chocolate chips. The chocolate will melt differently and not harden the same.

How To Make Raspberry Cheesecake Truffles

  1. Add graham crackers to a blender or food processor and pulse until fine and no large chunks remain.
  2. Roughly chop the fresh raspberries and set aside.
  3. Combine graham cracker crumbs, softened cream cheese, whipped topping, vanilla extract, and fresh raspberries in a large bowl and mash/stir to combine. Personally, I like using my hands because it makes getting all the ingredients together easier.
  4. Once combined, use a cookie scoop to scoop out some of the raspberry cheesecake filling and roll into a ball. Place the ball on a parchment paper lined cookie sheet or large plate and repeat until all the filling is used.
  5. Place the raspberry truffles in the fridge and let set up for 1 hour.
  6. After 1 hour, heat the melting chocolate in the microwave in 20 second increments (stirring in-between) until melted and warm. One at a time roll the raspberry filling ball in the chocolate letting the excess drip off. Place to coated truffle back on the parchment paper and repeat until all the raspberry truffles are coated in chocolate.
  7. Let the truffles harden for 15 minutes (longer depending on the type of chocolate used) and either drizzle with additional chocolate, decorate, enjoy immediately or store leftovers.

Decorating Ideas

So for this raspberry truffles recipe you could keep it real simple with decorating or go all out. I have said several times that I am not a great decorator, therefore I went with this keep it simple route. Once the chocolate hardens I simply melted additional baking chocolate and drizzled it over the top. Boom, done, moving on. If you are wanting to go more extravagant and make them super cute for Valentine's Day, have no fear I have ideas.

  • Add some topping: This is really pretty simple as well and you could add anything from additional graham cracker crumbs, festive hearts sprinkles, or a whole raspberry on top. If you go this route make sure to add the topping while the truffle chocolate coating is still tacky or the topping with just roll right off.
  • Add some designs: If you are great with drawing, then this may be for you. You could melt additional chocolate like shown, but instead of just flinging it on you could drawn some hearts for Valentine's Day, letters spelling out L-O-V-E or even a name. This extra personal touch will sure impress you special someone, but will be more time consuming.
