  1. Great recipe! I used it for stuffed manicotti. I did decrease the amount of garlic powder to 1/2 teaspoon though. On my bottle it said 1 clove of garlic = 1/8 teaspoon garlic powder. So.....1 Tablespoon would be equal to 24 cloves of garlic if I did my math right, haha?

  2. This is REMARKABLY similar to the real thing in texture and taste. I used extra firm tofu and just as a preference, I omitted oil.

  3. I used three blocks of tofu in blender with 3 eggs and a home blend of dried oregano, basil, tarragon, and some parsley. Used the lemon juice, evoo, and garlic powder. Blended well. It made quite a thick layer, so I think one package (2 blocks) tofu would be enough to do the 9X13 pan.

  4. We use 2-3 cloves of fresh garlic instead of powdered but follow the recipe otherwise. It's a delicious substitute for ricotta. We actually prefer it. Thanks!

  5. I LOVE the idea, as my DD has a dairy allergy. I tried it with a 12 oz box of Tofu, but it had quite a bite. I need to either reduce the spices, or up the tofu. I used it in a ham/mashed potatoe casserole and it was good. I will rate once I try it again, but I think this is great!

<p>I have been married to my amazing husband for 8 wonderful years. We added a baby boy to the mix in March '08 with another just added March '10. We have two adorable rescue dogs, a chihuahua/min pin mix and a yorkie/westie mix. I have been an ovo-lacto vegetarian for 14 years. <br /> <br />After moving to our fourth state in a year, we have finally settled in Texas. I don't know how I like all the rain and the human-sized bugs, but we really enjoy the area we have chosen to live in. Being a vegetarian in this part of the country is HARD. No one quite gets it. <br /> <br />I love testing my zaar recipes on DH. When he loves something he exclaims, Where did you get this recipe?!? and of course, my answer is always the same. <br /> <br /><img src=http://www.enviro-tote.com/imagesNew/stockart/bannerVeggie.gif alt= /> <br /> <br />My ratings system: <br />5***** <br /> I would glady serve this to guests, or make it and secretly eat it all by myself. <br />4**** <br /> Great recipe. Liked enough to print out and place in my permanent cookbook. <br />3*** <br /> Recipe not quite for me, but others might like it. Could be more to my liking with a few modifications. <br />2** <br /> Didn't like. Possible ingredient errors in recipe. Probably wouldn't use again. <br />1* <br /> Really didn't like. Would never use again. <br /> <br />#NOTE# <br />If I review any recipes containing meat, it is a recipe I prepared and DH reviewed. <br /> <br /><img src=http://www.enviro-tote.com/imagesNew/stockart/bannerVeggie.gif alt= /> <br /> <br />Little Italy, San Diego <br /><img src=http://i42.photobucket.com/albums/e342/hadice/Cool/LittleItaly.jpg alt= /> <br /> <br /><img src=http://i3.photobucket.com/albums/y53/duch*eSS13/berriesblinkie.gif alt= /><img src=http://i23.photobucket.com/albums/b399/susied214/projects/untitled_1.jpg alt= /> <br /> <br /><img src=http://i23.photobucket.com/albums/b399/susied214/permanent%20collection/200_artistrichardneuman-art-prints_.jpg alt= /><img src=http://i23.photobucket.com/albums/b399/susied214/permanent%20collection/untitled.jpg alt= /><img src=http://i10.photobucket.com/albums/a132/tgifford/Game%20Room%20Banners/AM%20Banners/KBparticipation.jpg border=0 alt=Photobucket /> <br /> <br /><img src=http://farm4.static.flickr.com/3316/3345270671_dd30334798.jpg alt= /><img src=http://i250.photobucket.com/albums/gg271/MrsTeny/AMpageSticker.jpg alt= /> <br /> <br /><img src=http://i250.photobucket.com/albums/gg271/MrsTeny/Permanent%20Collection/Aug09PaperSwapSticker.jpg alt= /> <br /> <br /><img src=http://i80.photobucket.com/albums/j166/ZaarNicksMom/Animation6.gif alt= /> <br /> <br /><img src=http://i80.photobucket.com/albums/j166/ZaarNicksMom/PACsticker-Adopted.jpg alt= /> <br /> <br /><img src=http://i16.photobucket.com/albums/b2/kiwidutch/my3chefs2009final-1.jpg alt= /></p>

The Best Cheese For Lasagna

Ricotta brings the rich creaminess while cottage cheese lightens things up and seasons the whole dish.

Can I use cream cheese instead of ricotta? ›

Cream cheese: Cream cheese is made with milk and cream, while ricotta is made with just milk. The lower fat content makes the latter cheese slightly less creamy. However, cream cheese can still be substituted for ricotta.

What do Italians use instead of ricotta in lasagna? ›

I like using béchamel sauce instead of ricotta because it holds the mouthwatering lasagna layers together and gives the dish an overall creamy texture. Using béchamel is also the authentic Italian way to make lasagna.

What can I use instead of ricotta and cottage cheese? ›

Cream Cheese is a great substitute. I have a friend with similar distaste to cottage cheese so we just use cream cheese, cheddar and mozzarella. I agree with the texture issue. I had luck this week using real - not light - sour cream instead of ricotta.

What does adding egg to ricotta for lasagna do? ›

For extra creamy ricotta, add in an extra egg, a handful of grated parmesan, and a quarter cup of shredded mozzarella. Eggs help prevent the ricotta from drying out and serve to bind the ricotta so it doesn't become runny.

Can I substitute dry cottage cheese for ricotta? ›

You can use cottage cheese instead of ricotta for lasagna and stuffed shell recipes, but usually that's only for people looking to lower the fat and calories in their dish, rather than a taste or texture preference. Strain or blend the cottage cheese if you want the consistency to be closer to ricotta.

Do Italians use ricotta in lasagna? ›

While ricotta is included in certain varieties of lasagna in Italy, the style that serves as the primary inspiration for American recipes is the one from the region of Emilia Romagna. There, it's traditionally layered with pasta, bolognese, and béchamel—with no ricotta to be found.

What happens if you don't add egg to ricotta for lasagna? ›

Adding egg to ricotta cheese helps to bind the cheese for lasagna so that it doesn't ooze out of the casserole when you cut it. Basically, the egg helps all the cheesy goodness stay intact. So what happens if you don't put eggs in your lasagna? It'll just be a bit runnier, but omitting the egg won't affect the taste.

How much cottage cheese instead of ricotta? ›

Cottage cheese is pretty flavorless on its own, so it takes on the yumminess of your dish while adding a nice texture. Using it as a ricotta substitute is easy peasy! Just swap it in using a one-to-one ratio. It works great in pasta or on pizza.

What can I substitute for ricotta cheese in lasagna vegetarian? ›

Silken tofu is the best choice for a ricotta replacement, drained and run through a food processor. There are even vegan-friendly ricotta recipes online that use tofu to make it. That mixture would drop in fine to lasagna or another pasta dish.

Is Philadelphia cream cheese ricotta? ›

The main difference between the two is that cream cheese is made of cream, while ricotta is made of whey (the liquid left over from the cheese production). Since the raw material they are produced from, the production mechanisms of the two are utterly different.

Can I substitute mozzarella for ricotta cheese? ›

Since mozzarella is actually made with whey, in terms of relativeness, it may seem like a fitting match for ricotta. However, it is a bit stringier in comparison, so you will need to adjust your ratios accordingly for the substitution to account for the texture.

Can you substitute sour cream for ricotta cheese in lasagna? ›

You can do that! We know it sounds weird, but some lasagna recipes call for sour cream instead of ricotta. It actually makes for a moist, creamy, dreamy pasta night. Since ricotta is so mild, you won't even notice the missing ingredient, but if you'd like, you can stir some shredded Parmesan into your sour cream.

Does real Italian lasagna have ricotta? ›

In southern Italy lasagna is generally made with dried sheets of pasta layered with rich meat ragú, ricotta and mozzarella. In the north, especially in Bologna, the most popular version of lasagna features fresh egg pasta colored green with spinach and layered with ragú, bechamel and Parmigiano Reggiano.

Can I use Greek yogurt instead of ricotta cheese? ›

Use Greek yogurt in recipes where ricotta is imparting a creamy texture, like being stirred into a sauce. If you need 1 cup of ricotta and only have 1/2 cup, adding 1/2 cup of Greek yogurt to it would be perfect. But if you're truly out of ricotta, start with 3/4 cup Greek yogurt for every 1 cup ricotta needed.

Does cottage cheese taste the same as ricotta in lasagna? ›

Beyond having the incorrect texture, cottage cheese's flavor is sharper and more acidic than mild ricotta, which has a sweeter taste that doesn't clash with other ingredients.
